Easy Sugar Cookie Recipe

What Makes This Cookie So Great?
Everyone knows sugar cookies are a kids favourite, being able to decorate and shape them with cookie cutters. With this quick recipe your kids don't have a log wait time before all the designing begins!
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups margarine
2 1/4 cups white sugar
2 1/4 teaspoons vanilla extract
1/4 cup white sugar for cookie decoration
Before you start with the ingredients preheat the oven to 350F (175C). In a large bowl, mix together the dry ingredients (flour, baking soda, and salt); set to the side.
In a slightly larger bowl, whip together the margarine and 2 1/4 cups sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla. Slowly stir in the dry ingredients until just blended. Roll the dough into balls about 1 tablespoon in size. Roll the balls in remaining 1/4 cup of sugar. Place the sugar cookies 2 inches apart onto ungreased cookie sheets and press down slightly.
Bake the sugar cookies for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a cooling rack till they're room temperature.

Sugar cookies are slightly more unhealthy than others with the word "sugar" in its name but at only 160-180 calories it's well worth it.
