Chicken Pasta Salad
Looking for a quick and delicious lunch or dinner? Be sure to give this recipe a try.
If you're anything like me, nothing beats opening the fridge door when you're feeling famished and finding something already prepared and delicious. Make this dish ahead and keep it in the fridge for a quick lunch or dinner. Although the recipe calls for chicken, I've also tossed in salmon or leftover turkey. -175g or 6oz of fusili pasta
-500ml (2 cups) cubed chicken or turkey
-2 large tomatoes
-125ml (1/2 cup) of dices celery
-125ml (1/2 cup) blanched snow peas
-75ml (1/3 cup) diced red onion
-50ml (1/4 cup) fresh chopped parsley
-3ml (1/2 tsp) dried dill
-50ml (1/4 cup) olive oil
-25ml (1.5 tbsp) vinegar (you can use white, red or apple cider vinegar)
-15ml (1 tbsp) grated parmesan
-1 clove of minced garlic
-salt and pepper
What To Do
Combine salad ingredients in a large bowl.
Whisk dressing ingredients and pour over salad.
Cover and chill 1 or 2 hrs.
