Tips to Eat Healthy on a Budget

It can be difficult to eat well when you're on a tight budget. Here are ways to save money and still eat whole, single-ingredient foods with a great recipe.

Tips to eating healthy on a budget

  • Plan your meals for the week and make a shopping list. Only buy what you're sure you will use and check out what you have in your cupboards first.
  • Stick to your list when you're shopping. Shop the perimeter of the store first, as this is where the whole foods are generally located.
  • Cooking at home is way less expensive than eating out. Some like to cook for the entire week on weekends, while others like to cook one meal at a time.
  • Cook large meals from inexpensive ingredients and use your leftovers during the following days.
  • Shopping while hungry can lead to cravings and impulsive buying. If you're hungry, have a snack before you go shopping.
  • Less expensive cuts of meat are great to use in casseroles, soups, stews and burritos. These types of recipes usually make big meals and lots of leftovers.

Slow Cooker Pork Tenderloin

Slow Cooker Pork Tenderloin with Winter Veggies

Prep Time: 10 minutes

Cook Time: 2 hours on high, 4 hours on low

Serves: 4

Ingredients:

1 (2 lb) pork tenderloin (see Notes below)

3 red potatoes, cut into 2-inch cubes

3 stalks celery, chopped into 2.5-inch pieces

2 carrots, sliced into 1-inch circles (we used a mixture of purple and orange carrots)

1 red onion, sliced into 1-inch half-moons

3 garlic cloves, roughly chopped

1 cup chicken broth or vegetable broth

1/4 cup balsamic vinegar

2 Tbsp grainy mustard

2 Tbsp maple syrup

1/2 tsp salt

ground black pepper, to taste

fresh thyme leaves, to taste

fresh chopped parsley, for serving

Directions:

1. Add all ingredients except parsley to a large slow cooker, positioning the pork tenderloin in the centre and surrounding it with the vegetables. Replace lid and cook on high for 2 hours or on low for 4 hours.

2. Once the cook time is up, transfer pork to a cutting board and slice into medallions.

3. Dish up the vegetables along with those delicious slow cooker juices onto plates or into shallow bowls, top with pork tenderloin medallions, then garnish with parsley. Serve warm.

Notes:

To enhance the caramelized flavour in this stew, you can sear the pork in a skillet before it goes in the slow cooker. To do so, add olive oil to a skillet set over medium-high heat, then brown each side of the pork tenderloin until desired colour; continue with the remainder of the recipe.
