Easy Pumpkin Cookie Recipe

What Makes This Cookie So Great?
Pumpkin Cookies are great since they are naturally glutten free. This is a quick recipe to make with only 5 ingredients. Great for a healthy snack they are soft and chewy makes them a healthy breakfast option.
2 cups gluten free quick oats
2 cups pumpkin (100% pure pumpkin not the pie filing)
1/4 cup coconut palm sugar
Pinch of Cinnamon
Chocolate chips or nuts can be added
Preheat the oven to 350 degrees.
Prepare baking tray by lining with parchment paper or lightly grease a baking tray and set aside.
In a large mixing bowl, combine the oats, pumpkin and granulated sweetener of choice and mix well. Form into small balls and place on the baking tray and press each ball into a cookie shape. Top with chocolate chips orl nuts and bake for 12-15 minutes, First allow the cookies to cool on pans for 2 minutes; transfer directly to racks to cool completely.
