2 Bags of 14 ounces sweetened shredded coconut
2 Cans 14 ounces sweetened condensed milk
2 teaspoon pure vanilla extract
2 large egg whites, at room temperature (Extra Large works best)
1/2 teaspoon kosher salt
Preheat the oven to 325 degrees F.
In large bowl combine the coconut, condensed milk, and vanilla extract. Using an electric mixer with whisk attachment whip the egg whites and salt on high speed in the bowl until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.
Prepare baking pan by lining with parchment paper Spoon cookie batter onto baking pans with parchment paper using tablespoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve
