Mom’s Healthy Cookie Recipe
Whether you enjoy these with a glass of milk or a cup of coffee, they are a tasty treat you'll want to savour again and again.
Most of my Saturdays are spent helping out my mom with whatever errands she needs to do. As a thank you, she will often bake some of my favourite treats. When I drove up to pick her up last Saturday, she got into the car with a twinkle in her eye and that grin that always reminds me she is up to something. From her oversized handbag, she pulled out a plate filled with one of my favourite cookies. Every time I taste these, it brings me back to my childhood. With Mom’s permission, I’d like to share that recipe with all of you.
• 1 cup of whole wheat flour (or you may use all-purpose)
• 1 tsp soda
• ½ tsp salt
• 2 cups of oats (quick cook oats are fine)
• ¼ cup of wheat germ
• ¾ cup butter (room temp)
• 1 ½ cups lightly packed brown sugar
• 2 eggs
• 1 tsp vanilla
• ¾ cup shredded coconut
• ¾ cup of chocolate chips (or you may use raisins). I must confess, my preference goes to the chocolate chip!
1-Combine the flour, soda, salt, oats and wheat germ. Stir well to blend.
2-Cream butter, brown sugar, eggs and vanilla thoroughly.
3-Add oat mixture to the butter mixture. Mix well.
4-Stir in coconut and chocolate chips (or raisins).
5-Drop the dough by the teaspoonful onto a lightly greased baking sheet. You may also use parchment paper instead of greasing the baking sheet. Flatten the dough lightly.
6-Bake at 350 degrees F for 12-15 minutes or until golden brown.
This makes 12-18 cookies.
