Is Gluten-Free the Answer?

Modern wheat is just a shadow of the ancient wheat that was eaten by our grandparents and the generations before them. Due to the need to create more food, wheat has been hybridized to be grown and harvested as efficiently as possible. In the process of the first hybridization, wheat went from having 14 chromosomes originally to 28. After another hybridization, the wheat went from 28 chromosomes to 42 chromosomes. During the processes, new proteins were created.

These new proteins are the source of many health issues from weight gain, to various forms of inflammation, to celiac symptoms. Some people blame gliadin as the main culprit and some blame the harvesting process but the main point is this hybridized wheat is the cause.

Einkorn, on the other hand, is the oldest wheat and has not been hybridized. Our ancestors thought of einkorn as the Staff of Life. Einkorn is low in gluten, however, gluten does not appear to be the issue since our ancestors tolerated it well. It is hybridized gluten that is the issue with emmer. There are reports some celiacs can tolerate einkorn, however, like many products, this depends on the individual.

Einkorn has a light nutty taste and is easier to work with as compared to many gluten-free flours. Since it is low in gluten, you do not have to knead or develop the gluten as in emmer. The hydration level is slightly different so about 20% more of einkorn flour is needed.

Currently, there are only a few producers of einkorn flour. I prefer and trust the Einkorn products produced by from Young Living. Young Living grows their own einkorn wheat in France and in Utah and follow their Seed to Seal® process to ensure the best product available.

Give einkorn a taste, as I am sure you will find it has a lot more flavour and none of the side effects of modern wheat.
