Quinoa Cookies

Quinoa Cookies, & why they're so great!
Quinoa Cookies are probably the most healthy cookies you can eat! High in protein and gluten free makes this cookie popular especially for a healthy snack and quick breakfast. This recipe is easy to prepare and kids love them!!
Ingredients
1/3 cup quinoa
2/3 cup water
1 cup rolled oats
1 cup shredded coconut
1 cup all-purpose flour or all-purpose unbleached flour
3/4 cup brown sugar
2 ripe bananas, mashed
1/2 cup applesauce
1/2 cup peanut butter (smooth or crunchy)
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup semisweet chocolate chips
1 teaspoon vanilla extract

Preparation Instructions
Bring water and quinoa to a boil in a saucepan. Place a lid on the saucepan, reduce heat to medium-low, and cook at a simmer until the moisture is absorbed completely, Leaving the pot covered, removed the pan from the heat and let sit for 5 minutes. Uncover, fluff with a fork, and set aside. Approximate 15 to 20 minutes.
Preheat oven to 350F degrees
Mix well cooked quinoa, oats, shredded coconut, flour, brown sugar, mashed bananas, applesauce, peanut butter, vanilla, salt, baking powder tbaking soda all gether in a large bowl. Fold the chocolate chips into the quinoa mixture. Use parchment paper to cover baking sheets or grease sheets then drop cookies mixture by spoonful onto baking sheets.
Bake in preheated oven until browned around the edges, 20 to 25 minutes. Remove from over and allow cookies to set and cool. Enjoy!!
