Easy Ginger Cookie Recipe

What's So Great About Ginger Cookies
Like Oatmeal cookies, ginger cookies have many different types but all in the same "ginger" families. In the family you've got molasses, gingerbread, soft ginger and ginger snaps! Today I we are presenting an easy ginger cookie recipe that everyone is sure to enjoy!

Ingredients
1 cup unsalted butter, at room temperature
1 1/4 cup firmly packed light brown sugar
1/4 cup unsulphured molasses
2 large egg whites, at room temperature
1/3 teaspoon pure vanilla extract
2 2/3 cups all purpose flour
2 teaspoons baking soda
1/3 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves

Preperation Instructions
In a large, beat together the butter and sugar until light and fluffy (takes approximately 2 - 3 minutes). Add the molasses, egg whites, and vanilla extract and beat until it is well mixed. In a different bowl whisk together the flour, baking soda, salt, and spices. Add the dry ingredients mixture to the butter mixture and stir until the ginger cookie batter is well combined. Cover the batter with plastic wrap and allow it at least an hour to chill.
If you haven't done so yet preheat your oven to 350F (180C). Line baking sheet with parchment paper.
Put about 1 cup of granulated white sugar in an average sized bowl. When the batter has chilled, roll it into 1 inch balls. Then roll the cookie balls into the sugar, coating the entire face. Place on your baking sheet, spacing about 2 inches apart. Then, gently flatten the cookies slightly.
Bake for about 8 - 10 minutes or until the cookies are firm around the edges but are still a little soft in the centres. The longer the cookies bake, the more crisp they will be. Cool the ginger cookies on a wire rack.
